- Education – The New York City Board of Health recommends that all employees attend basic food safety courses and the manager of the restaurant be certified in Food Protection.
- Proper Temperature – Food should be stored at the proper temperature.
- Pests are a problem. Each fruit fly is one point off on your inspection. The difference between a B and an A is 13 points.
- Rodent door sweeps on outside doors and making sure all surfaces in your kitchens are de-greased will go a long way in helping you obtain that “A”.
